Benna's Rib Roast

  • Rolled Rib Roast
  • Salt and pepper

Preparation

Step 1

The roast recipe is too simple for a professional like you:

1. Season rolled rib roast (a big one, not wimpy California spa type portion) and let stand for two hours or so as necessary to come to room temperature.

2. Pre-heat oven to 550 (yes, very hot).

3. Insert roast fat side up and immediately reduce heat to 350.

4. Cook roast 18 to 20 minutes per pound for medium rare, or longer for a more done roast.

5. Make gravy from pan drippings.

6. Let roast stand at least 15 minutes before carving.
