Ingredients

  • 1/4 cup shortening

  • 1 cup brown sugar packed

  • 1 egg

  • 1/2 cup hot coffee

  • 1 1/2 cup flour

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1 - 2 tsp cinnamon

  • 1/2 cup raisins

  • 1/2 cup chopped nuts

  • Icing

  • 1 1/2 cups powdered sugar

  • 1/4 tsp vanilla

  • 2 - 3 tsp cream

Directions

preheat over 350 degrees 13x9 pan Mix shortening and sugar well, add egg, and beat until fluffy, add coffee and mix well. Mix all dry ingredients then add to other mixture. Add raisins and nuts and mix well. Pour into greased & floured 13 x 9 inch pan and bake 18 - 20 minutes at 350 degrees. Mix icing and speed icing over cake as soon as you take from oven while cake is still hot and sprinkle with chopped pecans. Cut when cool
