Zucchini Beef Casserole

Ingredients

  • 1 lb Beef (You can use either ground beef or whole beef cut into small pieces)
  • 1 T. Salad oil
  • 1 onion chopped
  • 1 green pepper, chopped
  • 1 16 oz stewed tomatoes
  • 1 6 oz can tomato paste
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/4 tsp garlic powder
  • 2 medium zucchini cut into 1/4 inch slices

Preparation

Step 1

Cook onion, pepper in oil until onion is tender. Add meat; cook stir until meat is brown. Stir in stewed tomatoes, tomato paste, salt, oregano garlic powder. Simmer 10 minutes; add zucchini; cook, covered 10-15 minutes, until zucchini is tender-crisp. I bake this in the oven - prepare in the morning
