Ingredients
- 6 cups milk
- 3 cups semolina
- 3 egg yolks
- 6 Tbs. butter, melted
- 1/2 cup + 1/4 cup grated parmesan
- salt
- pepper
- nutmeg

Step 1
Bring milk almost to a boil in a large saucepan. Pour in semolina in a steady stream, stirring constantly. Cook on low continuing to stir for 15 minutes. Remove from heat and beat in egg yolks, 3 Tbs. butter and 1/2 cup cheese. Season. Beat briefly, lifting the mixture to incorporate air. Spread mixture in a circle 1 inch thick on a lightly floured counter or cutting board and let cool. Cut into biscuit sized circles with the rim of a class. Place in a well-buttered baking dish. Pour 3 tablespoons of melted butter over the top, then sprinkle with 1/4 cup cheese. Bake, uncovered, at 400° for 15 minutes.
