Coconut chicken fingers with sweet & sour sauce

Ingredients

  • 1.25 pds raw chicken tenders
  • 1 c sweetened flake coconut
  • 1 c panko bread crumbs
  • 1/4 c flour
  • 1 t garlic powder
  • 1 t ground ginger
  • 1 t salt
  • 1/4 t black pepper
  • 2 eggs
  • 1 T water
  • 1 T Dijon mustard
  • Dipping Sauce
  • 1/2 c pineapple preserves
  • 1 T white vinegar
  • 2 t Dijon mustard

Preparation

Step 1

preheat oven to 425
lightly spray baking sheet with non stick spray
in a medium bowl combine coconut, panko, flour, garlic powder, ginger, salt and pepper-mix well
in a small bowl beat the 2 eggs with the water and mustard
dip the chicken in the egg mixture and then dredge them in coconut bread crumb mixture-press gently to get coating to stick-place chicken on prepared baking sheet-for added color spritz the chicken w cooking spray
bake 15-17 mins till juices run clear
To make sauce
combine pineapple preserves, white vinegar and 2 T Dijon mix well
use for dipping
