  • 1 !/4 lbs French or Green Beans

  • Pinch of salt

  • 2 tblsp extra virgin olive oil

  • 3 cloves garlic

  • 1½ c grated Parmesan cheese

  • ½ lemon


- Cook beans as you normally would. - Drain and reserve some of the liquid. - Using the same pan, put garlic and olive oil in and stir. - When the garlic starts to turn golden, add the beans and stir lightly. - Add a ladleful of the reserved cooking water, the Parmesan, and the juice from the 1/2 lemon. - Stir and simmer until the water and the cheese start to form an oozy, sticky sauce. - Remove from the heat and serve immediately.
