Ingredients
- 3 medium very ripe bananas, mashed (1 1/2 cups)
- 2 large eggs
- 1 1/4 cups sugar
- 1/2 cup butter OR margarine, softened
- 1 tsp. vanilla
- 1/2 cup buttermilk
- 2 1/2 cups all-purpose flour
- 1 cup chopped nuts
- 1 tsp. baking soda
- 1 tsp. salt

Preheat the oven to 350 degrees Fahrenheit. Grease the bottom of two 8 1/2" x 4 1/2" x 2 1/2" loaf pans OR one 9" x 5" x 3" loaf pan. In a large bowl, cream together the sugar and butter. Stir in the eggs until the well blended. Stir in the bananas, buttermilk, and vanilla and beat the mixture until it is smooth. Stir in the flour, baking soda, and salt just until the batter is moistened. Stir in the nuts. Divide the batter evenly between the loaf pans. Bake the two loaf pans for about 1 hour in the center of the oven OR bake the one loaf pan for about 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool for 10 minutes on a wire rack. The bread should be cooled for 2 hours before slicing.
