Microwave chicken enchiladas

For use with the Tupperware Stack cooker but can be easily adjusted to cook in the oven.

Ingredients
- 1 1/2 cups cooked chicken, diced or shredded
- 1/2 cup chopped red pepper
- 1/2 cup chopped green pepper
- 1/2 cup chopped onion
- 2 Tablespoons Southwest Chipoltle Seasoning
- 1 can of enchilada sauce
- flour tortillas
- shredded cheddar cheese

Preparation
Step 1
Place 1 cup of water in base of stack cooker. Put veggies in shallow colander. Cover and microwave on high for 5 minutes. You can also steam or sautee veggies with any other method. Toss with seasoning.
Pour a little enchilada sauce in bottom of Stack Cooker. Layer flour tortilla, veggies and chicken, cheese. repeat 4 layers. Cover and microwave on 70 % for 7-10 minutes. Let stand a few minutes before serving.
