Baked Potato Chips

Ingredients

  • 1 Russet Potato, sliced into paper thin rounds (1/2 lb)
  • 1 T olive oil
  • salt and pepper to taste

Preparation

Step 1

preheat oven to 375
line 2 baking sheets with parchment paper

*Soak* potato slices in ice water for 10 minutes, drain, layer on paper towel and blot dry. Gently toss with olive oil, salt and pepper. Arrange in a single layer on baking sheets.

*Bake* until golden brown and crisp - 20 to 25 minutes, Season with salt and pepper before serving
