Vodka Cream Pasta

Ingredients
- 2 shallots, minced
- 1 Tbsp. EVOO
- 1 Tbsp. butter
- 2 cloves garlic, minced
- 1 cup vodka
- 1 cup chicken broth
- 32 oz. can crushed tomatoes
- salt
- pepper
- 16 oz. penne
- 1/2 cup heavy cream
- basil leaves

Step 1
Add EVOO, butter, garlic and shallots to large skillet and saute 5 minutes. Add vodka to pan. Reduce by half (2 or 3 minutes). Add chicken stock and tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
While sauce simmers, cook pasta. Stir cream into sauce. When sauce returns to bubble remove from heat. Drain pasta. Toss with basil leaves and sauce.
