Mississippi Mud Cake

Ingredients

  • 1 cup butter, melted
  • 2 cups sugar
  • 1/2 cup unsweetened cocoa
  • 4 large eggs, slightly beaten
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups coarsely chopped pecans, toasted
  • 1 (10.5 ounce) bag minature marshmallows
  • Chocolate Frosting
  • 1 (16-ounce) package powdered sugar, sifted
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 1/3 cup unsweetened cocoa
  • Beat All ingredients at medium spped with electric mixer till smooth.

Preparation

Step 1

>Wisk together first 6 ingredients in a large bowl. Stir in flour and chopped pecans. Pour atter into a greased and floured 15 X 10 inch jelly-roll pan.

>Bake at 350 for 20-25 minutes until wooden pick inserted in center comes out clean. Remove from oven; top warm cake evenly with marshmallows. Return to oven and bake 5 minutes. Drizzle Cocolate
Frosting over warm cake.
