Cheese Topped Roasted Smashed Potatoes

Ingredients

  • 12-15 whole small potatoes, cleaned
  • olive oil
  • salt & pepper
  • shredded cheddar cheese

Preparation

Step 1

Cover potatoes with water in a saucepan and boil over medium heat until fork tender, about 20 minutes.

Place the potatoes on a baking sheet. With a potato masher, gently press down on each potato. Rotate the masher 90 degrees and repeat with all of the potatoes. Spray (with Misto/etc) or drizzle olive oil onto each potato. Sprinkle each potato with salt and pepper and/or another herb of choice (rosemary, etc). Bake at 450F for 20-25 minutes or until lightly browned.

Remove from oven and sprinkle cheddar cheese on top of each potato. Return to oven until cheese is melted.
