Chopped salad with pita croutons

Ingredients

  • 1 pita
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 3/4 tsp oregano
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 4 chopped tomatoes
  • 1 peeeled, seeded and chopped cucumber
  • 5 sliced scallions
  • 1/3 cup chopped fresh parsley

Preparation

Step 1

Toast pita in 350 degree oven until crisp, about 10 minutes. Tear into pieces. Toss rest of the ingredients and add pita croutons.
