Porcupine Meatballs

This recipe was loved by both of my girls when they were younger - and today as well.
Ingredients
- 1 1/2 pounds lean ground beef
- 1 egg, beaten
- 2 or 3 (10.75-ounce) cans Tomato Soup
- 1/4 cup rice, uncooked
- 1/4 teaspoon salt
- 1/2 cup water
- 1 to 2 tablespoons Worcestershire Sauce
- 2 tablespoons onion, chopped (optional)
- Pepper, to taste
- Rice, cooked

Step 1
In a medium bowl, add the egg and 1/4 cup of Tomato Soup. Stir in uncooked rice, onion, salt and pepper; Mix well.
Add the ground beef and mix to incorporate. Shape the meat mixture into ball. Arrange the meatballs around the edges and middle of a large skillet.
In a medium bowl, mix the remaining Tomato Soup, water, and Worcestershire Sauce. Pour the sauce over the meatballs. Cover the skillet and cook the meatballs on MEDIUM heat for 20 minutes. Flip the meatballs over, cover, and simmer for an additional 20-25 minutes on LOW heat.
*The rice will pop out of the sides of each meatball, resembling a porcupine*. Serve the meatballs and sauce over rice.
