Ingredients
- Rub:
- 6 garlic cloves
- 1/4 cup rosemary leaves fresh
- 1/4 cup basil leaves fresh
- 1 tsp. kosher salt
- 2 tsp. pepper
- 3 tbsp. dijon mustard
- 3 tbsp olive oil
- Ble Cheese Dressing for Roast:
- 3/4 cup wqhipping cream
- 6 oz. bluecheese crumbled
- 2 or 3 garlic cloves
- pepper
- Sweetheart Sauce:
- 3tbsp each of catalina dressing, honey, apricot jam and grape jelly
- 2 tbsp each minced onion or chives, balsamic vinegar, olive oil, ketchup
- 1tbsp soy sauce
- 3 cloves garlic minced
- 1 tsp ground mustard, worchestire sauce, dash of salt and pepper and red pepper flakes

Preparation
Step 1
Rub:
Put all ingredients into food processor and blend. Leave roast at room temperature for 30 minutes and put rub all over the roast and let marinade. Roast
Dressing:
Heat Cream then blend in blue cheese, garlic and pepper
Sauce:
Bring all ingredients to a boil. Reduce heat and simmer for 30 minutes stirring occasionaly . Double the receipe, keeps in the fridge for weeks.
