Ingredients

  • Rub:

  • 6 garlic cloves

  • 1/4 cup rosemary leaves fresh

  • 1/4 cup basil leaves fresh

  • 1 tsp. kosher salt

  • 2 tsp. pepper

  • 3 tbsp. dijon mustard

  • 3 tbsp olive oil

  • Ble Cheese Dressing for Roast:

  • 3/4 cup wqhipping cream

  • 6 oz. bluecheese crumbled

  • 2 or 3 garlic cloves

  • pepper

  • Sweetheart Sauce:

  • 3tbsp each of catalina dressing, honey, apricot jam and grape jelly

  • 2 tbsp each minced onion or chives, balsamic vinegar, olive oil, ketchup

  • 1tbsp soy sauce

  • 3 cloves garlic minced

  • 1 tsp ground mustard, worchestire sauce, dash of salt and pepper and red pepper flakes

Directions

Rub: Put all ingredients into food processor and blend. Leave roast at room temperature for 30 minutes and put rub all over the roast and let marinade. Roast Dressing: Heat Cream then blend in blue cheese, garlic and pepper Sauce: Bring all ingredients to a boil. Reduce heat and simmer for 30 minutes stirring occasionaly . Double the receipe, keeps in the fridge for weeks.
