Beef Roast

  • Rub:
  • 6 garlic cloves
  • 1/4 cup rosemary leaves fresh
  • 1/4 cup basil leaves fresh
  • 1 tsp. kosher salt
  • 2 tsp. pepper
  • 3 tbsp. dijon mustard
  • 3 tbsp olive oil
  • Ble Cheese Dressing for Roast:
  • 3/4 cup wqhipping cream
  • 6 oz. bluecheese crumbled
  • 2 or 3 garlic cloves
  • pepper
  • Sweetheart Sauce:
  • 3tbsp each of catalina dressing, honey, apricot jam and grape jelly
  • 2 tbsp each minced onion or chives, balsamic vinegar, olive oil, ketchup
  • 1tbsp soy sauce
  • 3 cloves garlic minced
  • 1 tsp ground mustard, worchestire sauce, dash of salt and pepper and red pepper flakes



Step 1

Put all ingredients into food processor and blend. Leave roast at room temperature for 30 minutes and put rub all over the roast and let marinade. Roast

Heat Cream then blend in blue cheese, garlic and pepper

Bring all ingredients to a boil. Reduce heat and simmer for 30 minutes stirring occasionaly . Double the receipe, keeps in the fridge for weeks.
