Creamy Lasagne Rolls
- 1/3 cup butter
- 1/3 cup flour
- 2 tsp Italian seasoning
- 3 cups milk
- 1 lb mozzarella cheese, grated
- 1 300g package chopped spinach
- 2 carrots, grated
- 2 eggs, beaten
- 1/4 tsp each pepper and nutmeg
- 1/2 cup parmesan cheese
- 1/2 lb lasagne noodles, cooked
Melt butter, add flour. Add seasonings and milk, stir untl thickened. Stir in 2 1/2 cups mozza cheese until cheese is melted.
Mix together spinach, carrots, eggs, seasonings, parmasan and 1 cup mozza cheese. In a lightly greased 13x9 baking dish, spread 1/2 cup sauce over bottom. Place 1/4 cup filling on each noodle, roll up, cut in half and place curly side up in baking dish. Pour remaining sauce over noodles. Cover and bake at 375F for 35 minutes. Uncover and sprinkle remaining mozza cheese and bake another 10 minutes.
