Ingredients

  • 6 T. vegetable oil
  • ½ t. black mustard seeds (don’t use white ones, omit if not available)
  • ½ t. cumin seeds (whole)
  • 2 ½ t. scraped, grated ginger
  • ¼ cup finely chopped onion
  • 1 t. salt
  • ½ t. tumeric
  • 2 lb. cauliflower, washed, trimmed and divided into florets
  • 1 medium tomato, chopped
  • 1 fresh hot green chili, about 3” long, finely chopped
  • ½ t. ground cumin
  • ½ t. sugar
  • 1 ½ T. finely chopped fresh coriander (optional)
  • 1 ½ T. melted butter
  • ½ cup green peas (optional)

Preparation

Step 1

Heat vegetable oil in large heavy casserole over moderate heat until light haze forms over it. Stir in mustard seeds and immediately add cumin seeds, ginger and onions. Cook for 1 minute, stirring constantly. Add salt and tumeric and continue stirring 3-4 minutes.

Drop in cauliflower and turn florets over with a spoon until evenly coated with onion mixture. Stir in tomato, chili, ground cumin, sugar and 1 t. fresh coriander. Reduce heat to low and cook over moderate heat, stirring constantly until cauliflower is tender but still intact. Sprinkle rest of coriander and melted butter on top.
