PASTA WITH BACON IN TOMATO CREAM SAUCE

Ingredients

  • 4 slices bacon
  • 2 scallions, sliced thin
  • 2 tbsp. unsalted butter, cut into bits
  • 2 tbsp. flour
  • 1 c. heavy cream
  • 1/2 c. freshly grated Parmesan
  • 1/2 c. peeled, seed and chopped tomato
  • 1/4 tsp. white pepper
  • 1/8 tsp. nutmeg
  • 1/4 tsp. salt
  • 1/4 lb. cheese filled tortellini, cooked

Step 1

In a skillet, cook the bacon until crisp. Drain on paper towels and pour off all but 1 tablespoon of the fat in skillet. Cook scallions in skillet for 1 minute. Drain scallions on paper towel. In large saucepan, cook the butter and flour, add cream over moderate heat for 3 minutes, stirring constantly. Stir in Parmesan and bacon, crumbled. Add scallions, tomato, pepper, nutmeg and the salt. Simmer for 1 minute. Add tortellini and stir.
