  • 2 cups sugar
  • 1 cup butter, softened
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups quick cooking oatmeal
  • 1 cup raisins

Step 1

Preheat oven 400 degrees. Beat the sugar and butter until it's pale, light and very fluffy. Add the eggs beat until it looks creamed not curdled. Measure and sift together flour, baking soda and salt. Add to shortening mixture then stir in quick cooking oatmeal. Stir in raisins. Mix well, but gently. Then shape in a small ball, flatten a bit with a fork. Bake in a hot oven 400 degrees for 10 minutes or until crisp and brown. Cool on a wire rack. To keep crisp, store in a tin, tightly covered container. Makes 10 dozen cookies.
