TWICE-BAKED POTATOES

Ingredients

  • 4 Baking potatoes
  • Melted butter
  • ½ cup Sour cream
  • ¼ tsp Garlic powder
  • 1/8 tsp Pepper
  • Milk (optional)
  • Shredded cheese

Preparation

Step 1

Bake potatoes at 425° for 40-60 minutes or until tender. Cut lengthwise slit on top of each potato. Discard skin from slice & scoop pulp into bowl. Mash pulp with potato masher or mixer on low speed. Add butter, sour cream, garlic powder & pepper; beat until smooth. (If necessary, stir in 1-2 Tbsp milk to make desired consistency.) Season to taste with salt & pepper. Spoon into potato shells. Place in 2 quart baking dish. Bake, uncovered, at 425° for 20-25 minutes until lightly browned. Top with cheese & bake an additional 2-3 minutes until cheese melts.
