Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1 Tbsp oil
  • 1 can chicken broth
  • 1, 8-oz can tomato sauce
  • 1 pkg taco seasoning mix
  • 10 oz frozen sweet corn, thawed
  • 1 medium red or green pepper
  • 1-1/2 cups rice

Step 1

Cut chicken and pepper into pieces. Cook and stir chicken in hot oil in a large skillet until thoroughly cooked. Add broth, tomato sauce, seasonings, and peppers. Bring to a boil. Reduce heat. Cover and simmer 8-10 minutes. Add corn and bring to a boil. Stir in cooked rice, cover, remove from heat and let stand 5 minutes. Top with sour cream and shredded cheddar cheese if desired.
