Ingredients
- BATTER:
- 1 1/2 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- pinch of cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup light brown sugar
- 1 large egg
- 1 cup unsweetened appleasauce
- FROSTING:
- 1/2 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/2 cup butter, softened
Preparation
Step 1
Preheat oven to 375 degrees. In a medium bowl whisk together flour, baking soda, baking powder and salt. Set aside.
In a large bowl, beat 1/2 cup butter and brown sugar until fluffy. Add egg and beat until smooth. With mixer on low, alternately add flour mixture and applesauce; beginning and ending with the flour mixture. Mix until just combined.
Drop dough by tablespoons full onto a baking sheet. Bake approximately 9-12 minutes. Immediately transfer cookies to a wire rack and allow to cool.
To make filling, beat remaining 1/2 cup butter and vanilla until light and fluffy. Gradually add powdered sugar and beat until smooth. Pipe filling onto half of each cookie and press together.
