Ingredients

  • 1 (8 ounce) package cream cheese, room temperature
  • 1 cup smooth peanut butter
  • 2 to 3 cups icing sugar, sifted
  • 1 tbsp. vanilla
  • Pinch salt
  • Chopped peanuts, for rolling
  • Melted dark chocolate and white chocolate, for drizzling
  • Lollypop candy sticks (optional)

Preparation

Step 1

Add cream cheese to medium bowl, beat with electric beaters until smooth. Add peanut butter, 2 cups icing sugar, vanilla and salt. Whip until well combined and smooth. Taste and adjust icing sugar, adding up to 1 cup more if you prefer a sweeter taste. (Note: If you add less sugar, the mixture will be a little softer to work with, but will freeze firm.)

Cover and freeze the mixture until completely firm, about 1 hour.

Using a small ice cream scoop or 2 spoons, scoop out mixture and roll into 1-inch balls. Transfer to tray lined with parchment paper. If the mixture at any time becomes too soft to work with, pop back in freezer to firm back up.

Roll peanut butter balls in chopped nuts. Then drizzle with melted chocolate.

Insert candy sticks, if desired. Freeze until completely frozen, about 2 hours. Thaw for 5 minutes before serving.
