Sweet Potato Pie

Ingredients

• 1.5 c cooked, mashed sweet potatoes
• 1.5 c sugar
• 2 1/2 T butter, softened
• 2/3 c evaporated milk
• 3 egg yolks, beaten
• 1 t vanilla extract
• 1 t nutmeg
• 3 egg whites

Preparation

Step 1

Beat egg whites at high speed until stiff peaks. Fold egg whites into sweet potato mixture. Bake at 375 for 10 minutes; reduce heat and bake 45 minutes at 350.
