Tracy's Outstanding Chickpea & Olive Salad

Ingredients

  • 16 oz. can chickpeas
  • 1 small cucumber
  • 2 medium tomatoes
  • 1 small purple onion
  • 3 tablespoons chopped fresh parsley
  • 1/2 cup pitted black olives
  • 2 tablespoons lemon juice
  • 1/3 cup olive oil
  • 1 large clove garlic,crushed
  • 2 teaspoons honey

Preparation

Step 1

1. Cut the cucumber in half, lengthwise, scoop out sides and then slice into ½ inch slices. Cut the tomatoes in cubes similar in size to chickpeas and chop the onion and parsley.
2. Combine all these ingredients with chickpeas and olives in large salad bowl.
3. In Small screw top jar combine dressing ingredients. Shake contents. Pour over salad, toss salad and serve. (*Note: Parmesean/Focaccia bread makes an excellent accompaniment.

Parmesean/Focaccia Bread:
Melt 3 tablespoons butter; brush over the top of one loaf of Focaccia bread sprinkle with ½ cup of freshly grated Parmesan cheese. Bake in 350° oven for 12-15 minutes.
