Thai Chicken Lettuce Cups

Ingredients

  • 1 pound ground chicken breast
  • 3 Tbls. chicken broth or water (or sesame or grapeseed oil for Phase 3)
  • 4 shallots, diced
  • 1/2 red onion, diced
  • 2 cloves garlic, finely minced
  • Minced fresh chiles, jalepeno or Fresno (amount is up to you*)
  • 1 lime, juiced
  • 4 tsp. tamari, or to taste
  • 1 head Bibb lettuce, leaves separated into "cups"
  • 1 handful of cilantro and/or mint cut into small strips

Cook time: 8 min.
eat a nonstick skillet over medium-high heat. Add the chicken and 1 tablespoon of chicken broth or water (or oil, for Phase 3). Cook, stirring and breaking up the ground chicken until it is browned, about 3 minutes.

Push the ground chicken to one side of the pan and add the remaining tablespoon of broth, water or oil. Add the shallots, red onion, garlic, and fresh chiles. Saute until fragrant, about 30 seconds. Add the lime juice and tamari. Re-incorporate the chicken and mix well.

Serve in lettuce cups, topped with cilantro or mint.

*Note: 1 1/2 Tbls. of minced jalepeno makes this dish mildly spicy. Add more if you like a kick.
