Ingredients

  • Crust:
  • 4 oz graham crackers
  • 2 oz sugar
  • 2 oz melted butter
  • (option: can use oreo cookie crumbs, just add 1 oz melted butter instead)
  • Cheesecake base:
  • 1#4oz cream cheese, room temperature
  • 7 oz sugar
  • 1/2 oz cornstarch
  • 1/2 tsp vanilla
  • 4 oz eggs, room temperature
  • 1 1/2 oz egg yolks, room temperature
  • 2 oz heavy cream
  • 1 oz milk
  • 1/4 oz lemon juice

Preparation

Step 1

Crust:
Melt butter
Toss with graham crackers and sugar
Press into the bottom
Prebake for 10-12 mins in a 350 degree oven
Let cool

Cheesecake base:
Blend the cream cheese, cornstarch and sugar;cream until smooth;scraping the bowl down often.

Add eggs and yolks slowly;add vanilla.

At the end quickly blend in the heavy cream, milk and lemon juice.

Pan out into cake pan.

Bake in a 350 degree water bath until set.

Cool slightly and refrigerate.
