- 4 oz graham crackers
- 2 oz sugar
- 2 oz melted butter
- (option: can use oreo cookie crumbs, just add 1 oz melted butter instead)
- Cheesecake base:
- 1#4oz cream cheese, room temperature
- 7 oz sugar
- 1/2 oz cornstarch
- 1/2 tsp vanilla
- 4 oz eggs, room temperature
- 1 1/2 oz egg yolks, room temperature
- 2 oz heavy cream
- 1 oz milk
- 1/4 oz lemon juice
Toss with graham crackers and sugar
Press into the bottom
Prebake for 10-12 mins in a 350 degree oven
Blend the cream cheese, cornstarch and sugar;cream until smooth;scraping the bowl down often.
Add eggs and yolks slowly;add vanilla.
At the end quickly blend in the heavy cream, milk and lemon juice.
Pan out into cake pan.
Bake in a 350 degree water bath until set.
Cool slightly and refrigerate.
