Ingredients

  • 1/2

    red onion, chopped

  • 1

    yellow pepper, chopped

  • 1

    stalk celery, chopped

  • 1

    cucumber, chopped

  • 2

    vine ripe tomatoes, chopped

  • 1

    clove garlic, minced

  • 1/4

    cup extra virgin olive oil

  • 1 1/2

    tablespoon sherry vinegar

  • Salt and freshly ground pepper, to taste

  • Handful Italian parsley, chopped

Directions

Add red onion, yellow pepper, celery, cucumber, tomato and garlic to large bowl. Drizzle with olive oil and sherry vinegar and season with salt and pepper. Finish with parsley.
