  • cocoa powder
  • 12 oz. bittersweet chocolate
  • 3/4 cup cream
  • 3 Tbs. Cognac
  • 6 eggs at room temperature
  • 6 Tbs. sugar



Step 1

Line a 9 1/2” springform pan with parchment paper, butter paper, and then sprinkle with cocoa powder. Melt the chocolate, cream, and cognac over simmering water. Beat the eggs and sugar for 5 minutes. Fold into the chocolate. our the batter into prepared pan. Bake in a bain Marie at 350 for 25 - 35 minutes, or until just set. The cake should be moist but not liquid. Cool completely in the pan. Unmold, sprinkle with confectioners sugar and serve with whipped cream.
