  • 2 eggplants
  • 2 T olive oiil
  • 2 cloves garlic, pressed
  • Zest and juice of 1 lemon
  • 1 small onion, chopped
  • 3 T basil
  • Salt and pepper

Preparation

Step 1

Roast eggplants 45-60 minutes in 400 degree oven

Cool and halve eggplants; scrape flesh into food processor with olive oil. Puree Add remaining ingredients and pulse to combine
