Egg Salad Sandwiches

Ingredients

  • 6 eggs, hard-boiled & finely chopped
  • Salt & white pepper
  • Few drops of lemon juice
  • Mayonnaise

Vary this by adding 1/4 cup of any of the following: fresh lemon thyme leaves, finely-chopped parsley, chives, watercress, chervil, crumbled, cooked bacon, chopped ripe olives.

Flavor with a dab of horseradish, onion juice or Dijon mustard. Make into sandwiches.

For onion lovers, try a ring or two of Vidalia onion in sandwiches.

This can be used to stuff tomatoes or cherry tomatoes. Chopped shrimp or crabmeat are good added when you stuff tomatoes with it. Also, you might add finely-chopped capers and celery.
