Asparagus and Ham Crepes

Ingredients

  • 8 Classic Crepes
  • 8 thin slices ham
  • 16 cooked asparagus spears
  • 1 cup grated Swiss Cheese
  • 2 tbs. butter
  • 2 tbs. flour
  • 1-1/4 cups milk
  • 1/2 cup grated Swiss cheese
  • 1/4 tsp. white pepper
  • 1/2 tsp. salt

Step 1

Make crepes as directed and set aside. Place one slice of ham on each crepe. Top each with 2 asparagus spears and 2 tablespoons grated Swiss cheese. Roll up and place in buttered ovenproof serving dish. Melt butter in small saucepan. Stir in flour and cook 2 minutes. Add milk gradually and cook, stirring, over low heat until sauce thickens. Stir in the remaining 1/2 cup Swill cheese, pepper and salt. Spoon sauce over rolled crepes. Place in 375 oven 10-15 minutes to hear. Run under broiler to lightly brown. Makes 4 servings.
