Quick and easy filling recipe for goulash that my family has been enjoying for years.
- * 1 lb. ground beef
- * 1 med. onion, chopped
- * 1 med. green bell pepper, chopped
- * 2 15-oz. cans diced tomatoes
- * 2 15-oz. cans water
- * salt and pepper to taste
- * 1 lb. elbow macaroni
Place large pot of water to boil and add 1 tsp salt. While waiting for water to boil, brown ground beef, onion, bell pepper, salt and pepper in large skillet, breaking apart beef as it cooks. Drain and return to skillet. Add 2 cans tomatoes and 2 cans water. Bring to a low boil and simmer for 15 minutes. Add macaroni to water and cook per directions. Drain macaroni and return to pot. Pour beef and tomato mixture over macaroni and add salt and pepper to taste. Serve immediately.
