Ingredients
- 4 osso bucco
- Flour
- 50 grams butter
- 4 oz dry white wine
- 225 grams tomatoes, peeled and chopped
- Meat stock or water
- Salt and pepper
- 4 tbs. finely chopped parsley
- 1 tbs. finely grated lemon rind
- 1 small garlic clove, crushed
Preparation
Step 1
Coat the meat with flour and brown in butter on both sides. Add the wine and simmer 10 minutes, then add tomatoes and stock or water to cover and season. Coo with the lid on for 1 1/2 hours - 2 hours, stirring occasionally. Add the stock or water to keep the meat covered at first then the sauce should be thick at the end.
Make a paste of the parsley, lemon, and garlic; place alittle on each pieceof meat and cook a few minutes longer.
