Ingredients
- 1½ cups flour
- 1 tsp. baking powder
- ½ tsp. salt
- 1 tsp. grated lemon rind
- ½ cup shortening
- ¾ cup sugar
- 2 eggs
- ½ cup milk
- ½ cup chopped nuts
- ¼ cup sugar
- 2 tbs. lemon juice
Preparation
Step 1
Combine flour, baking powder, salt, and lemon rind. Stir well. Cream shortening, sugar, and eggs together; add dry ingredients alternately with milt to create a creamed mixture. Mix lightly after each addition. Stir in nuts. Turn batter into a greased loaf pan. Bake at 350 degrees for 55 – 65 minutes. Leave cake in the pan to cool. Combine the sugar, and juice; stirring until dissolved. Pierce the top of the warm cake with a toothpick. Spoon the glaze over the cake, stand 5 minutes then remove the cake from the pan and cool completely.
