Tomato Gratin

Ingredients
- 2 tbsp olive oil
- 1 red onion, thinly sliced
- 1 tsp dried thyme
- 2 lbs or more plum tomatoes sliced 1/4 inch thick
- Salt and pepper
- 2 tbsp balsamic vinegar
- 1 tbsp butter
- 1/4 Parmesan cheese

Preparation
Step 1
Set oven at 425. Oil 8x12 baking dish. Heat olive oil and sauté onion with thyme until soft. Spread onion on oiled baking dish.
Arrange tomato slices over onion, season with s & p, drizzle with balsamic. Dot with butter and sprinkle with Parmesan.
Bake on upper rack for 330 minutes. Let rest for 5 minutes before serving
