Brown Sugar Oat Muffins

Ingredients

  • 1 cup old-fashioned oats
  • 1 cup whole wheat flour
  • 3/4 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup 2% milk
  • 1/4 cup canola oil
  • 1 teaspoon Spice Island® Pure Vanilla Extract

Preparation

Step 1

In a small bowl, combine the first six ingredients.

In another small bowl, beat the eggs, milk, oil and vanilla. Stir into the dry ingredients just until moistened.

Fill greased or paper-lined muffin cups two-thirds full.

Bake at 400° for 15-17 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.
