Ingredients

  • 2

    (15.25 oz) Cans White Sweet Corn

  • 2

    Cans Black Beans Drained & Washed

  • 1

    Can Pinto Beans Drained & Washed

  • ½

    Red Sweet Pepper

  • ½

    Orange Sweet Pepper

  • ½

    Green Pepper

  • 3

    Green Onions

  • 2

    Small Jalapenos

  • 2

    TBS Taco Seasoning

  • 1

    tsp Chili Powder

  • Cup Sugar

  • ¼

    Cup Oil

  • ¼

    Cup Red Wine Vinegar

  • Salt & Pepper to taste

Directions

In a large bowl put the drained corn, washed and drained black beans and pinto beans. Chop the green, red and orange pepper and add to the beans. Wash and chop the jalapeno pepper, you may use the seeds for a hotter version. Add the Taco seasoning, chili powder, sugar, oil, Red wine vinegar and salt and pepper. Mix well and refrigerate overnight. Serve with scoop tortilla chips
