Ingredients
- 2 cups plain yogurt
- 2 cucumbers, salted
- 2 cloves garlic (small)
- 1 1/2 teaspoons white wine vinegar
- 1 Tablespoon olive oil
- salt and pepper to taste

Step 1
Pour water off yogurt. Drain overnight in refrigerator. Peel cukes. Cut in half lengthwise. Scrape out seeds with spoon. Grate cukes into colander with large holes. Salt cukes and allow to drain for 30 minutes. Place garlic, vinegar and olive oil in bowl and marinate while cukes are draining. Squeeze cukes as dry as possible and
blot on paper towels. Place in bowl with garlic and yogurt and stir. Add salt and pepper it necessary. Chill. Can use sour cream, but no need to drain.
