  • 2 large eggs
  • ¼ cup packed light brown sugar
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 ½ cup wheat bran cereal
  • ½ cup oat bran
  • ½ cup all purpose flour
  • 2 tsp. baking powder

Preparation

Step 1

Heat oven to 375. Place paper cups in muffin tin.
Beat eggs and brown sugar in medium bowl until smooth. Whisk in milk and oil. Stir in wheat bran ceral. Let soak 10 min.

In a large bowl, thoroughly mix oat bran, all purpose flour, and backing powder.

Add soaked bran mixture and fold in with a rubber spatula just until dry ingredients are moistened.

Scoop batter into cups. Bake for 20 to 25 minutes, or until brown and firm in center. Turn on onto rack to cool.
