  • 6 vegan slider patties
  • 1 tablespoon vegetable oil
  • 2 bunches baby bok choy – stems and leaves separated and chopped
  • 2 cloves garlic chopped
  • 3/4 cup shitake mushrooms, stems removed and sliced 1/4 inch
  • 1/2 cup Asian vinaigrette (recipe follows)
  • 1/2 cup Dijon mustard
  • 1/4 cup chopped scallions
  • Toasted sesame seeds
  • Salt and pepper

  • Ingredients:
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon agave
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon siratcha
  • 1 teaspoon sesame oil
  • 3 tablespoons vegetable oil
  • Mix all ingredients except oil, slowly add oil. Shake or stir well before use
  • Avocado Fries
  • Ingredients:
  • 3 avocados cored and sliced about 1/2 inch
  • 1 1/2 cup flour
  • 2 cups seasoned breadcrumbs
  • 1 3/4 cup liquid egg whites (use vegan replacer)
  • 4 cups canola oil
  • Salt and pepper

Sliders: Season both sides of vegan patties and cook on frying pan or griddle at medium high heat for about 4
minutes on each side. While that is cooking heat vegetable oil in a separate sauté pan at medium high heat. Add
bok choy stems and mushrooms to the oil and cook for about 4 minutes or until the mushrooms are golden brown
and the bok choy has softened slightly. Reduce heat to medium low and add the bok choy leaves, garlic and ¼ cup
of the Asian vinaigrette and simmer for about another 3-4 minutes or until the leaves have begun to wilt. Mix the
remaining ¼ cup of vinaigrette with the Dijon mustard and set aside. Split the vegetable mix among the 6 rolls with a slotted spoon to drain
excess liquid. Top the veg mix with the burger patty and Asian mustard. Finish with a topping of scallions and
toasted sesame seeds. Serve immediately.


Avocado Fries: Generously season the flour with salt and pepper. Gently dredge the sliced avocado in flour, shake
off excess flour and submerge in egg replacer, shake off excess and dredge in bread crumbs. Put breaded avocado slices
in freezer overnight. When you're ready to cook the fries heat the oil to 350 in large pot or deep fryer. Fry the
avocados in small batches for about 3 minutes or until the fries are golden brown and crunchy. Serve with your
favorite dipping sauce or plain and enjoy!
