Recipe from Ann Jenkins, Harrogate, England
- 4 C of Self-Rising Flour
- 1 C Sugar
- 3 Tsp of Spice Mix
- 2 Tbsp of Lard (can substitute Shortening)
- 2 Tbsp of Butter or Margarine
- 1 C of Currants
- 2 Eggs (Room Temperature)
- 1/4 About 1/4 C of Milk
Mix Dry Ingredients. "Rub" shortening in until well blended. Add eggs and enough Milk to make dough the consistency of cookie dough. Roll out mixture on floured board to the thickness of thick cookies. Cut with a cookie cutter.
Place Cakes on HOT lightly greased griddle and fry until brown on both sides.
