Mexican Casserole

Ingredients

  • 1 lb. ground beef
  • 2 cups salsa
  • 1 (16oz) can chili beans, drained
  • 3 cups tortilla chips, crushed
  • 2 cups sour cream
  • 1/2 cup chopped green onion
  • 1/2 cup chopped tomato (OR 1 can diced tomatoes)
  • Cheddar Cheese

Preparation

Step 1

Preheat oven to 350.
Cook beef, stir in salsa, reduce heat and simmer 20 min. Stir in beans & heat through.
Spray 9x13" baking dish w/cooking spray. Spread crushed chips in dish, then spoon beef mix over chips. Spread sour cream over beef, green onions and tomato over sour cream. Top with cheddar cheese

Bake in oven for 30 min.
