Ingredients
- Frosting:
- 2 cups flour
- 2 cups sugar
- 1 Tablespoon baking soda
- 1 Tablespoon cinnamon
- 1/4 teaspoon salt
- 3 eggs
- 1 cup vegetable oil
- 3 cups grated carrots
- 10 Tablespoons butter
- 2/3 cup powdered sugar
- 1/4 Tablespoon vanilla
- 1 pound cream cheese
- 1 cup pecans - optional Raisins optional

Preparation
Step 1
1. Mix flour, sugar, baking soda, cinnamon and salt. Add eggs, oil and carrots and mix well.
2. Bake @ 375 for 45 minutes or until firm. Cool
3. Frosting: Mix butter, powdered sugar, vanilla and cream cheese. Frost when cooled.
