  • 1 egg white, lightly beaten
  • 1 c reduced fat ricotta cheese
  • 1/4 c sugar
  • 1 tblsp cold brewed coffee
  • 2 tsp grated orange peel
  • 1/2 c miniature semisweet chocolate chips
  • 1 c sugar
  • 1/2 c cold brewed coffee
  • 1/3 c canola oil
  • 1/2 c orange juice
  • 1 egg
  • 1 egg white
  • 1 tblsp cider vinegar
  • 1 tblsp vanilla extract
  • 1 c flour
  • 1/2 c whole wheat flour
  • 1/2 baking cocoa
  • 2 tsp baking powder
  • 1/2 tsp salt

Preparation

Step 1

In small bowl, combine egg white, ricotta cheese, sugar, coffee and orange peel. Stir in chocolate chips; set aside.

In large bowl, combinr thr 1st 8 batter ingredients, beat until well blended. Combine the flours, cocoa, baking powder and salt. Gredually beat into sugar mixture until blended.

Transfer to 13x9x2 baking dish coated with cooking spray. Top with heaping tablespoons of ricoota mixturel Cut through batter with knife to swirl.

Bake 350 F for 25-30 min orintul toothpick inserted near center comes out clean. Cool on wire rack. Refrigerate leftovers.
