Ingredients

  • 1 1/2 dry black beans
  • 5 c wter
  • 1 c chopped yellow onion
  • 1/2 lb chopped red potatoes
  • 1 c salsa
  • 2 cloves minced garlic
  • 1/2 tsp sea salt
  • 1/8 tsp pepper
  • 6 Tbsp shredded 4 cheese blend
  • 6 Tbsp low fat plain yogurt
  • 6 Tbsp minced cilantro

Preparation

Step 1

Soak dry beans overnight. Drain and place in slow cooker with water, onion, red potatoes, salsa, and minced garlic. cover and cook 8 hours on low.
Season with sea salt, pepper and top with cheese, yogurt and cilantro.
