- 1/3 Cup Olive Oil
- 1 tsp. Dried thyme leaves
- 1 tsp. Minced fresh garlic
- 1/2 tsp. Salt
- 1/4 tsp. Ground black pepper
- 1 Pound mixed fresh mushrooms, quarted (White, Crimmini, Portabella, Shiitake mushrooms)
- 2 Large Onions, each cut into 8 wedges
- 1 Large sweet red bell pepper, cut in 1' chuncks
- 2 Pounds Beef Tenderloin
- 1/2 cup dry red wine

Directions:
1. Preheat oven to 450
2. In a glass measuring cup combine Olive Oil, Thyme, Garlic, Salt and Pepper.
3. In a 13" X 9" backing pan toss together miushrooms, onions, red pepper and 1/4 cup of the iol mixture.
4. Place a baking rack over the mushrooms; place tenderloin on rack.
5. Roast, brushing beef twice with remaining oil mixture until meat is done as desired. 145 for medium rare, about 40 minutes.
6. Remove beef to carving board.
7. Spoon mushroom mixture onto a serving platter.
8. Place baking pan over medium heat, add wine and cook stirring frequently to loosen brown bits from bottom of pan, about 2 minutes.
9. Slice beef, season with salt and pepper if desired.
10. Serve with roasted mushrooms and pan juices.
