Ingredients
- 3 cups plain flour
- 2/3 cup oil
- 1/4 tsp. salt
- 3/4 cup warm water
Preparation
Step 1
Combine flour, salt, oil to a crumbly texture - slowly add warm water until a soft ball dough forms. Cover with plastic and set aside.
Filling:
2 pkgs. dried peaches (approx. 12 oz.)
1 1/2 cup water
(Combine peaches and water and soak minimum of 4 hours to overnight) in medium saucepan. Boil peach/water mixture until water disappears.
Add 1 1/2 cups sugar
1 stick butter
Cook on low until peaches are tender. Let cool. Divide dough into 10-12 balls, roll each ball onto a floured surface, fold in half to make a crease. Unfold and add 2 tbsp. fruit filling into center of fold. Crease edges together with fork. Poke 2 fork holes in center of pie to let air release while cooking. Fry in deep fryer or skillet with 2-3 inches of oil until crush is golden brown - (3-4 minutes approx.)
